for Whisky Live Tokyo 2013.
I have already dedicated a few posts to Tokyo International Bar Show & Whisky Live Tokyo 2013 but no worry I really like that event and have only good memories. I put on the blog tasting notes of special releases prepaired for the show eg. BenRiach 1985 Limited Realease TIBS and GlenDronach Single Cask 2002 TIBS.
Kilchoman was established in 2005 and is the youngest distillery on Islay of Islay. As, it is a farm distillery (Rockside Farm), it is surrounded by cultivated fields, some barley used in production comes from here, also it is locally malted. Very nice and calm place. There is: visitors centre, shop and nice restaurant. In Kilchoman Distillery they use Bourbon barrles from Buffalo Trace Distillery, Kentucky, USA and sherry oloroso casks from Spain. Kilchoman 100% Islay is very interesting proposition – from barley, matling to bottling – everything on Islay of Islay.
Kilchoman 5 years old Single Cask Release for Tokyo International Show & Whisky Live Tokyo 2013, is very young whisky, but natural colour, unchillfiltered i 57,3% ABV. Distilled on 8th November 2007, bottled on 8th January 2013. My bottle No. 445 out of 2007. Whisky, all the time, was matured in sherry oloroso casks.
I like Kilchoman bottles, especially its thick and wide base.
Lets do the tasting!
C: dark amber,
N: peat is obvious, high ABV level irritates the nose, a little sherry, addiction of water opened the nose and gave some freshness, delicate melon, watermelon and ash have appeared,
T: intense, fast-growing, soury, sherry, red ripe fruits, sweet and then straight to the overwhelming peat, on pepper,
F: medium long, peated.
Kilchoman 5 years old although young has quite a nice temper and accurately predicts the future of distillery. Described today release could mature a little longer, so it would pull out more from the wood. So far peat is quite overwhelming but in the future you will fell more sherry notes.
