Wild Fields Sherry Cask to dla mnie pewne zaskoczenie. To polska whisky, a niewiele o niej wiem. Generalnie dowiedziałem o niej z Instagrama od moich amerykańskich koleżanek, które jej próbowały i były zadowolone. W efekcie też nabyłem butelkę, aby sprawdzić co w trawie piszczy. Producent określa ten trunek jako Silesian Beskids Polish Whisky i podaje, że mamy do czynienia z single grain whisky (polskie żyto). Destylacja nastąpiła w grudniu 2014 roku, napełnienie beczek w lutym 2015 roku, a dalej dojrzewanie przez trzy lata w dwóch beczkach (po 250 litrów) po sherry (first fill Spanish oak). Kolor naturalny i non-chill filtered, a butelkowanie z 44% ABV. Brzmi intrygująco. K: złoty; N: hmm.... bardzo ciekawie, nieco piwniczne, taka piwnica z przechowywanymi warzywami, ziemniakami, jabłkami, zdecydowanie czuć sherry, takie przykurzone, wnętrze starej szafy, odległy dymek, dalej są rodzynki, może figi i daktyle, śliwka dotknięta ciemną czekoladą i miód, z czasem owoców przybywa, wszystkie są dojrzałe i całkiem intensywne, po głębszym wdechu trochę alkoholu, ale to w żaden sposób nie przeszkadza, ciekawie; S: tu też jest nieźle i intensywnie, sporo dojrzałych owoców, śliwki, czereśnie, wiśnie rodzynki, wszystkie te elementy dają tu bardzo ciekawe wrażenia, zaraz po nich przychodzi pewna ilość rozgrzewającego alkoholu, który trochę psuje wrażenia, z czasem robi się coraz bardziej wytrawnie, ściągająco z taninami; F: nawet długi, wytrawny, z pozostałościami sherry. Punktacja: 81. Wild Fields to zaskakujący produkt, podchodziłem do niej z dużą rezerwą. Po degustacji zmieniłem zdanie. Użyte beczki po sherry musiały być aktywne (first fill) i wywarły wielki wpływ na finalny produkt.
